Sundays are great for so many things. Family, coffee, football (for some), being outside, catching up on things around the house, and relaxing. And a relaxing Sunday calls for an easy, relaxing breakfast. Hello, poached egg.

So many times I have heard that it is very tricky to master the poached egg. It takes focus, timing, and patience. But who has time for all of that? My mother taught me the easiest way to poach an egg and it has never failed me!

Start with a sauté pan and add about an inch of water. Turn the stove onto medium-high heat and wait until it is JUST about to boil, but don’t let it boil. Once the water is at that point (it will look very bubbly), drop in the egg. Set the timer for 2 minutes and use a spoon to continuously scoop and drop water in the pan onto the egg, occasionally stirring as to not let the water boil. Do this the whole two minutes. Once the time is up, turn the heat off and let the egg sit in the hot water an additional minute.

Arrange a bed of mixed greens, add a yummy slice of tomato, a crispy piece of canadian bacon, and the poached egg on top, seasoned with salt and pepper. Add some shredded cheese and fresh basil if you like.

 And there you have it. Easy, relaxing, and everything Sunday.
