Merry Christmas and Happy Holidays, friends! I hope your day has been surrounded by good food, family, and lots o’ love. And of course, good cocktails.
We get double festive over here at the Johnson household due to my sister’s birthday being Christmas Eve. Or as she calls it, “her 8th annual 22nd birthday”.
So, like any big holiday or event we celebrated with a classic oyster roast. The rain and 80 degree weather can’t stop us from having a good time :)
A festive oyster roast calls for a festive cocktail. I bring you a “Grapefruit Rosemary Martini”.
OOOH grapefruit you so pretty.
Alcohol you need for this is:
Vodka of your choice (I prefer Tito's but anything will do, could also be good with gin). And:
That's right. Prosecco. Why top a drink off with club soda when you can have sparkling wine?
I started by making a rosemary simple syrup. I think I've shared before that simple syrup is THE easiest thing in the world (half sugar and half warm water).
But this time, I really wanted to infuse that rosemary flavor, and here is how you do it: boil one cup water and one cup sugar. As soon as it boils, turn it off from the heat and plunge the rosemary into the pot. Let this sit in there for hour.
After the hour is up, strain the syrup and pour into a bottle. Also, please taste it at this point, and then you can thank me whenever. On the left you will see the fresh squeezed grapefruit. I used a hand juicer like this one. It's AWESOME and worth it, especially for grapefruit or fresh orange mimosas.
Next I made a rosemary sugar for the rim. I removed rosemary from the stem and cut it up using a large knife until it was very finely ground, then mixed that with sugar.
I know the plate to the left looks like just a plate, but that's actually covered in the delicious rosemary simple syrup. Coat the martini glass rim in the syrup and then carefully cover the rim with the syrup.
So festive. In your shaking tin add:
-3/4 oz rosemary simple syrup
-1 1/2 oz vodka
-1 1/2 oz grapefruit juice
-handful of ice
Shake shake shake!
Strain into glass, top with prosecco, and add a rosemary garnish.
Hand to your sister on her birthday and enjoy ALL the beautiful Christmas festivities.
